kid Friendly Chicken Nuggets

Chicken nuggets, a favorite food of both kids and mothers. Kids love finger foods and mothers love a food that is fast and satisfies hungry tummies. But at 285 calories and 18 grams of fat for the average 6 piece serving are they kid friendly?

 Today’s children is the first generation in history that is not expected to live to be older than their parents. The food you feed your child today may be the heart attack he or she has in 20 years.

The following recipe for chicken nuggets is a fast food you can feed your family without sacrificing their health. Make this a family affair by involving the whole family in its preparation. 

Chicken Nuggets

3 skinless, boneless chicken breast

1 cup Italian seasoned bread crumbs

1/2 cup grated parmesan cheese

1/2 tsp. salt, 1 tsp. thyme, 1 Tblsp. basil

2 eggs or 1/2 cup egg beaters

1 cup whole wheat flour

1 cup buttermilk  

Preheat oven to 400.

Mix together the bread crumbs, Parmesan cheese, salt, thyme and basil; set aside. In a seperate bowl slightly beat eggs and add milk.

Cut the chicken breast into bite size pieces, coat with whole wheat flour and dip into the milk and egg mixture. Roll the chicken pieces in the bread crumb mixture.

Coat baking sheet lightly with canola oil or spray with vegetable oil spray and place chicken pieces on pan. Bake for 15 to 20 minutes, turning once, until golden brown.

Creamy Honey Mustard Dipping Sauce

Mix together 1/4 cup low-fat sour cream or plain Greek yogurt, 1 Tblsp. plus 1 tsp. mustard and 1 Tblsp. honey

Chili Dipping Sauce

Mix together 1/2 cup light mayonnaise, 1/2 cup low-fat sour cream, 1 tsp. horseradish and 1/4 tsp. cayenne pepper
